An allergy is considered an adverse immune system reaction to a substance that most people find harmless. Allergies can manifest in a variety of ways. Common examples of an allergic response include headaches, fatigue, sneezing, watery eyes, and stuffy sinuses, following exposure to dust, pollens, dust mites, animal dander, chemicals, and variety of other materials. "The allergic reactions themselves can range from mild to severe, depending upon the person," explains Dr. Wilkinson, MD, who practices environmental medicine in Yakima, Washington. "Many conditions are so common that they are almost considered normal by the people who suffer from them." Allergies fall into two categories, those caused by environmental factors, and those caused by food. Either type can result in a wide range of symptoms, and can cause or contribute to asthma, bronchitis, rheumatoid arthritis, diabetes, eczema, migraines, and cluster headaches, chronic fatigue syndrome, gastrointestinal disorders, glaucoma, kidney problems, weight gain, seizures, heart palpitations, depression, and even cerebral palsy and multiple sclerosis, among other conditions. The most common cause of environmental allergies are the pollens of various plants, such as trees, weeds, and grass, according to Dr. Wilkinson. House dust, mites, molds, and tobacco smoke are other causes. Less common, but equally serious are products often found in the home. "Cosmetics, perfumes, household cleaning agents, the gas we use for heating and cooking, the fabrics in our clothes, and even the metals used by dentists as fillings can trigger allergy attacks in some people," Dr. Wilkinson says. The fact that physical and mental disorders can be caused by allergic reactions to food was first discovered during the 1940's by Theron Randolph, MD, the founder of environmental medicine. His findings have resulted in a number of studies which link food allergies to a wide spectrum of health conditions. Dr. Bradly defines food allergies as abnormal or adverse immunological responses to foods that other people eat with impunity. "But food allergies must be distinguished from non-allergic reactions to food, such as enzyme deficiencies or food poisoning," he points out. According to the Allergy and Asthma Foundation of America, more than 55 million people in the United States battle asthmatic and allergic conditions. Asthma is a lung disease that causes inflammation and narrowing of the airways, causing wheezing and shortness of breath. It affects 17 million Americans, a number that is growing every year.
